Texas A&M has the lock on underwater archaeology in the US. University of Florida (in Gainsville) is a distant but rising second. Underwater archaeology can provide answers on a wide range of research questions not available through terrestrial means, from ship construction to trade networks to reactions to environmental changes. If you look at cost effective transport in ancient periods, water transport was the cheapest means for moving goods in bulk, far cheaper than land transport. For an accurate analysis of many cultures, water transport needs to be examined. Underwater archaeology typically costs a great deal more than terrestrial archaeology, so a valid research question has to be developed that can only be answered through underwater excavation. There are times when underwater sites are documented because they are "sexier" than terrestrial sites, but in fact the research question could be answered with cheaper terrestrial means. I'm not interested in college classes or a grad program, just a summer program, to get a taste for what it's like. Florida State and University of West Florida both offer programs in Marine Archeology, however you will be hard pressed to join up if you're not a student as many of these programs have limited space available and many matriculated students who want to apply.
